Grinding, not digging
A grinder takes the stump down in passes, throwing chips as it goes, and stops at whatever depth the job needs. Nothing is excavated, so a retaining wall or a driveway edge a foot away stays where it is. The chips and the ground root material go back into the void or get carted off with the rest.
Grinding is quoted separately from tree removal for a reason — it is a different machine, usually a different visit, and access for it is judged on its own.
What decides the depth
Depth is set by what goes back over the ground. Turf needs less than paving, paving needs less than a slab, and anything structural means chasing the root plate out rather than grinding the stump. Say what the ground is for and the depth follows from it — that single answer moves a quote more than the diameter does, which is worth knowing before comparing what tree work costs.

Local conditions

Common questions
How far below the surface does grinding go?
As far as the finished ground needs. Replanting turf takes less depth than laying paving, and anything being built on takes more again. The depth is agreed before the machine arrives, not decided on the day.
What is left behind?
A void filled with wood chips and ground root material. It can be left as backfill, topped with soil for planting, or carted away if something solid is going over the top.
Can a stump beside a fence or a wall be ground?
Usually, with a narrower machine. Access is what decides it — gate width, slope and how soft the ground is matter more than how big the stump is.
